PORK MEDALLIONS WITH BLACKBERRY SAUCE image

Number Of Ingredients 9

2 (1lb.) pork tenderloins
1 t salt
1/2 t pepper
1 t allspice
1/4 C butter
1/2 C chopped onion
2/3 C white wine
3 T blackberry preserves
fresh blackberries

Steps:

  • Bake tenderloins at 375 degrees or about 30 minutes or until thermometer reads 160 degrees. Melt 2 T butter in skillet. Add onions, wine, cook until liquid is reduced. Whisk in fruit and remaining butter. Cook 2 minutes or until thickened. Cut pork into 1/2 inch slices. Drizzle sauce over pork. Garnish with fresh blackberries.
