Poppy Seed Chicken Casserole image

This recipe was a real hit with everyone in the Test Kitchen. It is so very filling and we made a meal out of it by pairing it with a nice green salad.

Number Of Ingredients 8

5-6 chicken breasts, cooked and seasoned (or)
2 can(s) white meat chicken
1 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1 c sour cream
1 stack ritz crackers, crushed
1/2 stick butter, melted
poppy seeds

Steps:

  • 1. Cut chicken into bite-sized pieces, or, if you use the canned chicken, drain and break up pieces.
  • 2. Mix the soups and sour cream in a large bowl.
  • 3. Add the chicken and mix.
  • 4. Put in a buttered casserole dish. Top with crackers and drizzle with melted butter. Sprinkle with poppy seed.
  • 5. Bake at 350 degrees about 30-35 minutes or until bubbly and light brown.
