PISTACHIO APPLE SALAD image

1/4 cup freshly squeezed orange juice
2 tbls balsamic vinegar
1 tsp hot sweet mustard
1 clove garlic, minced
2 tbls sunflower oil
4 cups mixed baby greens
1 granny smith apple, cored and thinly sliced
1/2 cup Gorgonzola cheese, crumbled
1/2 cup roasted pistachio nuts

Steps:

  • For dressing, whisk together orange jice, balsamic, vinegar, mustard, and garlic; gradually whisk in oil until well blended. Let stand for 15 minutes to blend flavors. For salad, divide greens among four salad plates. Top with apple slices. Sprinkle with cheese and nuts. Whisk dressing; drizzle over salads.
