Portland-based Salt & Straw adds a drop of vinegar and a hint of pepper to balance the sweetness in this strawberry shake, plus a splash of rum to make it deliciously grown-up. If you're making this for the under-21 crowd, just omit the booze.

Yield Makes 4 servings

Number Of Ingredients 7

4 ounces fresh strawberries (about 3 large), hulled and quartered
1 tablespoon sugar
3 tablespoons dark rum, 80 proof
1 teaspoon Champagne vinegar or white wine vinegar
1 pint strawberry ice cream
Whipped cream
Freshly, finely ground black or pink pepper

Steps:

  • Combine strawberries and sugar in a small bowl; let macerate until juices are released, about 30 minutes. Add rum and vinegar.
  • Scoop ice cream into a blender. Add strawberry mixture and blend until smooth. Divide milk shake among small glasses. Top each shake with a dollop of whipped cream; sprinkle lightly with pepper. Serve with a straw (or two).

I followed the recipe exactly, but my milk shake didn't turn out as thick as I expected. Maybe I didn't blend it long enough.

This milk shake is a little too sweet for my taste. I think I'll try it with less sugar next time.

I'm not a big fan of milk shakes, but this one is really good. It's not too sweet and the flavor is just right.

This milk shake is so thick and creamy. It's like drinking a milkshake from a fancy restaurant.

I love the combination of flavors in this milk shake. The tartness of the berries and the sweetness of the ice cream are a perfect match.

This milk shake is the perfect way to cool down on a hot summer day. It's also a great way to get your kids to eat their fruit.
