Pineapple Rhubarb Pie image

I didn't like rhubarb until I ate it a few times. Now I really love it. This seems to be a good combo and its so easy to make.

Number Of Ingredients 6

1 1/4 c sugar
1/4 c all purpose flour
3 1/4 c thinly sliced rhubarb
14 oz crushed pineapple drained
1/2 tsp sugar
pastry for double pie crust

Steps:

  • 1. In a bowl, stir together the first amount of sugar and flour. Add rhubarb and pineapple and stir.
  • 2. Pour fruit mixture into pie shell. Moisten sides with water and cover with top crust. Make sure to cut slits in top crust. Sprinkle with remaining sugar.
  • 3. Bake at 350 on bottom rack for about 50-60 mintues-until crust is brown
