Pineapple Meatloaf image

I got this recipe from my nephew David.... His grandmother Slagle was a good cook... I don't know if this was her recipe or not... but I am putting it on here as one of hers until I hear different.

Number Of Ingredients 13

MEATLOAF
2 lb ground beef
2 lb ground turkey
2 lb pork sausage
3 c soft bread crumbs
2 can(s) crushed pineapple (do not drain)
1 of each: green and red bell peppers (diced)
4 large eggs (beaten well)
1 1/2 tsp of each: salt and pepper
BACON COATING
12 - 16 slice bacon
OPTIONAL
8 large bell peppers

Steps:

  • 1. Preheat oven to 350 degrees. Cut bacon into two pieces each. Put half of the bacon in the bottom of baking pan.
  • 2. Mix meatloaf mixture together and put on top of bacon in pan. Put remaining bacon on top of meatloaf. Refrigerate for 2 hours.
  • 3. Bake for 1 hour.
  • 4. *** Make gravy from juices in pan along with a little water and cornstarch, cooking over med-high heat until thickened. Add A little garlic pepper if needed. *** Serve with mashed potatoes and a salad.
  • 5. You can stuff several bell peppers and then bake in a roast pan. We have made this both ways.
