Pineapple Ham Loaf image

This is a delicious ham loaf that my family has love for about 100 years! Sometimes my mother would double or triple the recipe if company was coming or if she wanted to have leftovers. (We had a big family).

Number Of Ingredients 18

2 can(s) crushed pineapple including juice (set 1/2 can aside)
4 c bread crumbs
6 large eggs (beaten well)
1 each; red and green bell peppers (minced) set 1/2 cup aside
1 large onion (minced very fine)
4 lb smoked ham (ground)
2 1/2 lb pork (ground)
3 Tbsp soy sauce
1 tsp dry mustard
1 tsp ground black pepper
1/4 tsp ground red pepper
1/3 tsp salt (optional)
TOPPING
1/2 can(s) crushed pineapple (including juice)
1/2 c miced red and green bell pepper
1/2 tsp dry mustard
5 Tbsp honey
1 Tbsp prepared yellow mustard

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Set 1/2 can of crushed pineapple aside. Put the rest in a bowl (including juice). Stir in the bread crumbs, Leave sit.
  • 3. Beat the eggs and soy sauce and spices together well in large bowl. Add the green pepper, meats and mix together very well. Add the pineapple and bread mixture. Combine together well.
  • 4. Put into a roast pan, form into a loaf. Bake at 350 degrees for 2 hours.
  • 5. While the loaf is baking: Make the topping for the loaf by mixing all ingredients together and set aside until the last 35 minutes of cooking. Spread it over the loaf and return to oven for remaining time.
  • 6. Remove from oven and let sit for 10 minutes before slicing to serve.
  • 7. *** I serve this with mashed potatoes or rice, and with a vegetable mixture
