Pineapple Bread Casserole image

My family's holiday staple. We rarely had a holiday meal without this on the table. This is an excellent side to Ham, but goes well with turkey to. It comes out similar to a bread pudding. You can sub prepackaged bread cubes, just try and eyeball 6 slices worth.

I'm not a big fan of pineapple, but my husband is. I made this casserole for him and he loved it. He said it was the best pineapple dish he's ever had.

This casserole is a great way to use up leftover pineapple. I had some leftover from a party and this was the perfect way to use it up.

I made a few substitutions to the recipe, using Greek yogurt instead of sour cream and whole wheat flour instead of all-purpose flour. It turned out great!

I'm not usually a fan of pineapple in savory dishes, but this casserole changed my mind. The pineapple added a subtle sweetness and brightness that complemented the other flavors perfectly.
