Pina Colada Ice Cream image

A mixture of pineapple and coconut with a slight hint of rum flavoring makes this non-alcoholic ice cream a big hit on a hot summer day. I made this recipe up, but I think it's the best ice cream I've ever tasted. But be forewarned - it's very rich! Leftover ice cream keeps very well.

This ice cream is a great way to use up leftover pineapple. I added some chopped macadamia nuts for extra flavor.

The ice cream was easy to make, but it didn't turn out as creamy as I had hoped. I think I might have over-churned it.

This ice cream is a bit too sweet for my taste, but it's still good. I think I would reduce the amount of sugar next time.
