Pickels Not Yo Nachos image

There are so many layers of flavor and love in these delicious nachos. There's a bit of spice from the Rotel and taco seasoning in the chicken mixture. 3 chicken breasts, cut into slices, boneless and skinless
1 chopped yellow onion
1 can(s) stewed tomatoes, Mexican, 14.5 oz.
1 can(s) mild Rotel, 10 oz.
1 can(s) black beans, 15 oz
2 avocados
1 pkg guacamole mix
1 pkg Mexican taco seasoning
2 c sour cream, lite
2 c Mexican blend shredded cheese
2 c queso shredded cheese
1 jar(s) pickled jalapenos
1 bunch chopped green onions

Steps:

  • 1. In a large skillet, add 1 chopped onion, the canned tomatoes, Rotel, 1/2 pack of taco seasoning and sliced chicken breasts. Cook for 10 minutes or until chicken is thoroughly cooked. Then remove chicken and shred in a blender.
  • 2. Add rinsed and drained black beans to tomatoes, onion, and Rotel while blending chicken. Then add the chicken back to the mixture to cook for another 10 minutes.
  • 3. Mix together 1/2 pack of taco seasoning and sour cream.
  • 4. Mix 2 avocados and guacamole seasoning pack.
  • 5. Chop green onions.
  • 6. Plate chips. Top with chicken-onion-beans-tomato-Rotel mixture.
  • 7. Add Mexican shredded and queso shredded cheese. Microwave for 30 seconds until melted.
  • 8. Top with green onions, jalapenos, sour cream, and guacamole.
