Number Of Ingredients 14

8 oz Rice Sticks
2 tbs vegetable oil (less is ok)
2 chicken breasts , cut into thin strips, season with salt, pepper and paprika
1/4 cup water
1 garlic clove, minced
2 eggs, scrambled
4 tbs fish sauce
3 green onions, cut into 0.2 inch strips
2 tbs sugar
1 ts Paprika
2 cup bean sprouts, washed
1/4 cup coarsely ground peanuts
12 cilantro sprigs
1 lime, cut into wedges

Steps:

  • Boil rice sticks 6-8 minutes Heat oil in stir fry pan. Whisk eggs and 1 tb of fish sauce. Fry eggs to a thin omelet, cut into strips. Heat second tbs of oil. Brown chicken, then add sugar, paprika, fish sauce and water to finish cooking. Add cooked noodles, heat through. Add onions, peanuts and bean sprouts. Garnish with cilantro and lime.
