Peppered Corn Fritters image

Number Of Ingredients 11

1 1/4 cups fresh or frozen corn thawed
1/2 cup finely chopped sweet red pepper
1/2 cup finely chopped green onion
2 teaspoons chopped fresh parsley
1 1/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 cups milk
extra virgin olive oil or canola oil

Steps:

  • In a medium bowl, combine corn, pepper, onions, and parsley. Combine flour, baking powder, cumin, salt, and pepper; stir into corn mixture. Gradually add milk, stirring until blended. In a skillet over medium heat, heat ΒΌ cup oil. Cook for 2 minutes on each side or until golden brown. Repeat with remaining batter, adding more oil as needed.
