Number Of Ingredients 8

1 cup firmly packed light brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, melted
2 large eggs, lightly beaten
1 teaspoon vanilla extract

  • Lightly grease (or coat with nonstick cooking spray) 3 miniature muffin pans.
  • In a large bowl, combine the brown sugar, pecans, flour, baking powder and salt.
  • Make a well in the center of the mixture.

  • Pour the wet ingredients into the dry ingredients and stir just until combined.
