Time 10m

Yield 8 serving(s)

Number Of Ingredients 5

1/2 cup extra virgin olive oil
1/4 cup red wine vinegar
10 pecan halves, toasted
2 tablespoons brown sugar
2 cloves garlic, peeled and halved

Steps:

  • Combine all ingredients in food processor and process until mixture is smooth.
  • Chill before serving; makes enough to dress one large salad.
  • I recommend a salad of romaine lettuce, orange slices (fresh or tinned mandarins), sliced green onions and perhaps some thinly sliced raw mushrooms.

I'm not usually a fan of salad dressing, but this one is really good. It's not too heavy or oily. I used it on a salad with romaine lettuce, croutons, and Parmesan cheese. It was a great way to add some extra flavor to my salad.

This dressing is a bit too thick for my taste. I would have preferred it to be a bit thinner. I used it on a salad with mixed greens, tomatoes, cucumbers, and grilled salmon. It was okay, but I probably won't make it again.
