Peanut Butter Balls or Bars image

One thing I remember about the holidays growing up is that there were always peanut butter balls, or buckeyes, as some people call them!

Number Of Ingredients 6

1 jar(s) peanut butter (about 16 oz, I think..) (crunchy or creamy or both)
2 lb powdered sugar
2 stick butter or margarine
1 tsp vanilla extract
12 oz semisweet chocolate chips
2 Tbsp shortening or paraffin

Steps:

  • 1. Bring butter or margarine to room temperature (soft).
  • 2. Mix butter with peanut butter and vanilla. I clean out my peanut butter jars and just use what I have, some crunchy some creamy.
  • 3. Add powdered sugar, mix well.
  • 4. Roll into balls and chill (or press into dish for bars)
  • 5. topping: melt chocolate chips on 50% power in microwave for about 1 min., add shortening or paraffin, and stir until smooth. Continue heating at 15 second intervals, stirring until all smooth.
  • 6. dip peanut butter balls into chocolate and remove with toothpick or spoon and cool on wax paper
  • 7. OR pour chocolate over peanut butter bars in dish to make coating, sprinkle with chopped peanuts if desired.
