This is a fabulous Peanut Brittle recipe a friend of mine ran across. It takes only a few minutes to make and even fewer to be cleared from the serving tray!

Steps:
- 1. Combine Peanuts, sugar, syrup and salt in a 2 quart microwaveable bowl.
- 2. Cook on high in microwave for 8 minutes, stopping to stir half-way through
- 3. Add butter and Vanilla, mix well
- 4. Cook for 2 additional minutes
- 5. add baking soda and stir quickly until light and foamy
- 6. spread into a well buttered baking sheet
- 7. Cool and break into pieces, serve!
