Peachy Keen Cobbler image

OMG this is so good. I use 1/2c of brown sugar instead of the cup of white sugar because the crust comes out like a very most bread pudding...yum yum. This recipe is very quick and easy to make, and I also added the sub's for you. I hope you like it....Please feel free to leave a comment and let me know how yours turns out.

1 c self rising flour ( or can use homemade recipe from all purpose flour down below)
1/2 c brown sugar, firmly packed/ or sub for 1c white sugar
1/2 c butter or 1 stick of butter
1 c milk
28-29 oz 1 can of peaches in heavy syrup
1-2 tsp cinnamon

Steps:

  • 1. Pre-heat oven 350 Butter- put in baking dish and put in oven to melt while you pre heat ( dont let butter burn, butter will be ready in 3-5 mins while preheating the oven)
  • 2. Self rising flour- measure a cup and sift. ( Home-made self rising flour, for every 1c. of all purpose flour add 1 & 1/4 tsp of baking powder and 1/4 tsp. of salt ) and sift. ( remember to check on your butter in the oven, if its melted just take out and set on the stove until you have the rest ready to pour in)
  • 3. Brown sugar and sifted flour- mix together well Milk- add 1 cup slowly and mix until no lumps and pour batter over melted butter in pan ( Do not stir at all )
  • 4. Peaches- take out peaches with a spoon slowly add on top of batter, then gently pour 1/2 of the cans heavy syrup in different spot of the batter....( Do Not stir) Cinnamon- sprinkle on top and bake in the oven ( I always put a cookie sheet pan under my baking dish so it doesn't spill over, use a 2 quart baking dish) Bake for 30-45 mins until crust golden brown, let it cool for 15-17 min before serve, and you can add a side of vanilla bean ice cream and whipped topping.
  • 5. You can use can apples or other caned fruit with this recipe, I would only use the cinnamon on the peaches or apples. Home made from fresh peach- mix 2c of fresh cut peaches with1c white sugar and 1c of water in a sauce pan. Bring to a boil, reduce heat to simmer, and cook for 8-9 mins.
