Peach Bow Tie Salad image

This easy, yet gourmet, salad has spinach, peaches, romaine, bow tie pasta, and a poppy seed dressing. It's so delicious I could eat the entire recipe by myself! As a side salad this makes 12 to 18 servings, as a main dish salad it makes 5 to 9 servings.

I'm not a huge fan of bow tie pasta, but I really liked it in this salad. It held up well to the dressing and didn't get mushy.

I'm a vegetarian, so I used grilled tofu instead of chicken. It was a delicious and healthy alternative.

This salad is a great way to use up leftover peaches. I had a few peaches that were starting to go bad, so I threw them in this salad and they were perfect.

I followed the recipe exactly and the salad was still too sweet for my taste. I think I'll try it again with less sugar in the dressing.

This salad was a refreshing and delicious summer dish! The peaches were perfectly ripe and juicy, and the bow tie pasta was cooked al dente. I loved the combination of sweet and salty flavors.
