PEA SALAD

Pea Salad image

This is a recipe that my Mom made on every holiday. It just didn't seem right if this wasn't on the table. Of course, I love it any time. It only takes a few minutes to put it together but requires a couple of hours chilling time. It is worth it. I found photos on the internet since I have not taken my own pictures.

Ingredients

2 Tbsp celery, chopped
1 Tbsp red onion, chopped
2 Tbsp bell pepper, chopped, any color
1 tsp pimiento, chopped
1 Tbsp dill pickle relish
1 c cheddar cheese, diced
1 can(s) (17 oz) english peas, drained
2 eggs, hard boiled and chopped
2 Tbsp miracle whip salad dressing
2 c shredded iceberg lettuce

Steps:

1. Combine first 6 ingredients and mix well.
2. Add peas, eggs and mayonnaise and mix gently.
3. Chill thoroughly (at least 2 hours).
4. Just before serving, mix in lettuce. A little more Salad Dressing may be needed.
5. Garnish with sliced, hard-boiled egg and sprinkle with paprika.
