Yield 40 pieces

Number Of Ingredients 6

8 pounds small pigs' feet (about 10), each split into 4 pieces
2 cups white vinegar
2 tablespoons salt, plus more to taste
1 1/2 teaspoons red-pepper flakes
2 tablespoons hot-pepper sauce
Freshly ground black pepper to taste

  • Boil until tender and glistening, about 40 minutes. Meanwhile, put the remaining vinegar, hot-pepper sauce, salt and pepper to taste in a small bowl and stir to combine.
