Steps:
- 1. Bring water to a boil; add shirmp and return to a boil. Reduce heat and simmer 3 to 5 minutes. Drain well; rinse with cold water. Chill.
- 2. Cook penne pasta according to package directions; drain. Rinse with cold water; drain well.
- 3. Combine mayonnaise, sugar, vinegar, salt and pepper.
- 4. Combine veggies, pasta, shrimp and mayonnaise mixture and toss until coated and well combined. Cover salad and chill. Yield: 4-6 servings.
