Steps:
- Heat water for pasta. While heating saute chicken in olive oil and salt & pepper. Set aside and cover. Save cooking juices for later.In same pan, add more olive oil and saute muchrooms with salt & pepper. Remove from pan and st aside. Cook pasta. Save about 1/2 cup of pasta water. Drain cooked pasta. In same saute pan, add pesto, with butter and olive oil. add pasta water if needed to get a consistency that will evenly coat the pasta. Blend well, then add drained pasta & mushrooms. Mix together. Add chicken. Add any pas Mix. Then add cheese. Sprinkle Italian Parsley over top. Serve.
