I'm not a huge fan of Amatriciana sauce, but I decided to give this recipe a try anyway. I'm so glad I did! The sauce was rich and flavorful, and the pasta was cooked perfectly. I'll definitely be making this again.

This is my favorite pasta dish! I love the smoky flavor of the guanciale and the creamy texture of the sauce. I always add a few red pepper flakes for a little extra spice. This dish is definitely a keeper!

I'm a bit of a purist when it comes to Amatriciana, so I always use guanciale. However, I've heard that pancetta can be a good substitute. I've never tried it myself, but I'm sure it would be delicious.

I'm not sure what went wrong, but my Amatriciana sauce turned out bland and watery. I followed the recipe exactly, but it just didn't have any flavor. Maybe I used the wrong type of tomatoes?
