PASSOVER PINEAPLE KUGEL image

Number Of Ingredients 6

8 large eggs
1 cup sugar
2 cans (20 oz) crushed pineapple, drained
3 cups matzo farfel
1/2 melted margarine
ground cinnamon

Steps:

  • combine eggs and sugar in large bowl, and beat well. stir in pineapple and set aside. place farfel in another bowl, and add just enough warm water to cover. allow to sit for 3 minutes and then drain in colander. add farfel to egg mixture and stir well. add melted margarine, and stir until incorporated. transfer to prepared baking dish and sprinkle cinnamon. bake 45-60 minutes until kugel is set. remove and when warm, cut into squares and serve.
