Yield about 30 cookies

Number Of Ingredients 6

6 eggs
1 1/4 cups sugar
1 cup oil
2 1/4 cups cake meal
2 cups potato starch
1 cup chocolate chips ( I just used a whole package)

Steps:

  • beat eggs, sugar and oil together by hand. add cake meal, potato starch and chocolate chips and mix. then form loaves by hand. I used three and bake at 350 for 20 minutes. remove from oven, slice and sprinkle with sugar/cinnamon mixture. bake an additional 3 minutes. turn over add more cinnamon/sugar and bake an additional 3 minutes.
