500g Tomate triturado
2 berenjenas
Queso mozzarella (o queso fresco tipo burgos)
Queso parmesano rallado
Albahaca (si es fresca mejor)
Aceite de oliva

Steps:

  • Echar un poco de aceite en una sartén y poner el tomate a fuego lento para que vaya evaporando el agua. Añadir un chorrito de vino y albahaca u orégano (opcional). Se lavan y se cortan las berenjenas en rodajas de más o menos 1cm. Una vez lavadas y cortadas se meten en el horno a 180º hasta que estén hechas y hayan perdido un poco de agua. Colocar unas cucharadas de tomate en el fondo del recipiente, y espolvorear un poco de albahaca. Después la primera capa de berenjenas (importante, añadirles un poco de sal). Después se echan los quesos, unos cuadraditos de mozzarella y un poco de parmesano. Encima ponemos otra capa de berenjena, y a partir de ahí repetir hasta el final... tomate y albahaca, quesos, berenjena, tomate, quesos... Cocinar en el horno a 180º durante 30min.
