I have been making this recipe for a very long time. Something about shredding the zucchini changes the flavor and it even appeals to the pickiest eater. I'm sure the parmesan cheese helps too. : )

- 1. Using a food processor or hand grater, grate zucchini. Drain on paper towels to absorb excess moisture.
- 2. Place zucchini and green onions in a saucepan with melted butter on high heat until just heated through.
- 3. Remove from heat and add salt/pepper, and nutmeg. Serve immediately and sprinkle with grated parmesan.
