Parmesan Spinach Casserole image

This is a very simple but delicious dish that can be served alone or as a side dish. Great for pot-luck and family get togethers.

48 oz thawed, well drained, frozen spinach
1 qt heavy cream
3 c grated parmesan cheese, divided
2 Tbsp minced garlic
1 tsp crushed red peppers

Steps:

  • 1. Set out your spinach in a colander about 2 hours before preparing dish to allow it to thaw and drain well.Squeeze out as much moisture as you can.
  • 2. pre heat oven to 350.In a sauce pan slowly heat cream until it is just starting to steam. Add 2 cups of cheese and stir until melted. Add Garlic and crushed red peppers. Add spinach and mix thoroughly.
  • 3. Spoon spinach mixture into a buttered 9x13 inch casserole dish.Sprinkle top with remaining cup of cheese and bake for 45 minutes or until bubbling and top is slightly browning. let stand for 10 minutes before serving.
