Number Of Ingredients 6

8 medium red potatoes (about 1 3/4 lb.)
water
1 tablespoon salt
1/2 cup extra virgin olive oil
1/2 cup grated parmigiano-reggiano cheese
fresh ground black pepper

  • Cover potatoes with cold water in a 3-4 quart pot and add salt. Boil until almost tender, 10-15 minutes. Drain potatoes.
  • Move to a baking sheet and lightly crush to about 3/4" thick with a potato masher, keeping potatoes intact as much as possible.

  • Fried potatoes can be kept warm in a sheet pan in a 200*F. oven up to 30 mnutes.

I'm not sure what I did wrong, but my potatoes turned out mushy. I'll have to try this recipe again.

These potatoes were a bit too crispy for my taste. I think I'll try cooking them for a shorter amount of time next time.

Not bad! I've had better smashed potatoes, but these were still pretty tasty. The crispy skin was a nice touch.
