From my collection of handwritten recipes. Note: These tasty little fish are great served with french fries and cole slaw. Cook in small batches, wiping out pan as needed and replacing oil.

I'm not a big fan of smelt, but I thought I would give this recipe a try. I was pleasantly surprised! The fish was cooked perfectly, and the lemon butter sauce was very flavorful. I would definitely make this recipe again.
