Yield 6-8

Number Of Ingredients 7

2 - 4 tablespoon pure maple syrup
3 cups sliced peaches
1 cup whole milk
1 cup half & half or cream
4 eggs
1/4 cup flour (coconut flour, almond flour or a combination will work)
1 teaspoon vanilla

Steps:

  • Generously butter a shallow 1 to 1 1/2 quart baking dish (or pie plate). Place sliced peaches in dish. In a blender, blend the remaining ingredients for about 2 minutes (a handheld stick blender is fast and easy to clean, or a whisk will work, too). Pour the batter mixture over the peaches. Bake in a 375°F oven for about 40-45 minutes or until clafouti is golden. Let cool slightly, but it's best served when it is slightly warm. Garnish with a shake of cinnamon, a drizzle of heavy cream, and/or whipped cream.

I'm not a fan of paleo desserts, but this clafouti was surprisingly good! The peaches were sweet and juicy, and the almond flour crust was nice and crispy. I'll definitely be making this again.

This was my first time making clafouti, and it turned out great! The texture was light and fluffy, and the peach flavor was perfectly balanced with the almond flour and honey. I would definitely make this again.

I'm not sure what I did wrong, but my clafouti turned out really dry. I think I might have overbaked it. The flavor was still good, though.

This clafouti was a bit too dense for my taste. I think I would have preferred it with a lighter batter. The peach flavor was nice, though.
