I made this breakfats dish last year for Chistmas morning. It is so easy that I could enjoy the gift-giving without being worried about burning my omlettes. After the holidyas I have found that there are lots of mornings that I have better things to do then cook 4 individual omlettes. Enjoy!

I accidentally overcooked the omelet a bit, but it was still delicious. The cheese melted and browned perfectly, giving it a delightful crispy texture.
