Here in the Jersey "boonies" up in the far NW pocket, I volunteer to coach a children's running program in the winter. It's cold, so to make it fun, decided to have a Beach themed relay race as part of practice. I needed a prize for the winning team and came up with this recipe. Warning: they are sinfully good!

Steps:
- 1. Preheat Oven to 350
- 2. Combine all ingredients and mix until well blended, scraping bowl with spatchula to ensure you get the sides.
- 3. Pour into muffin papers and bake about 20 minutes or until tops are brown and cake springs back. Do not overbake.
