ORANGE SLICE COOKIES image

Chewy, orangey, full of flavor..these are a terrific cookie to make anytime of year!

Number Of Ingredients 8

1/2 lb candied orange slices, cut into small pieces
1/4 lb pecans, chopped fine
1 1/4 c brown sugar, firmly packed (i use dark brown)
1 c all-purpose flour
1/2 tsp baking powder
dash of salt
2 large eggs, beaten
1 1/2 tsp pure vanilla extract

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES. GREASE AND FLOUR A 9 X 13" PAN.
  • 2. SIFT FLOUR INTO A LARGE MIXING BOWL. STIR IN ORANGE SLICES, PECANS, BROWN SUGAR, BAKING POWDER AND SALT.
  • 3. ADD EGGS AND VANILLA.
  • 4. THE MIXTURE WILL BE STIFF. NO LIQUID IS NEEDED. POUR INTO PREPARED PAN.
  • 5. BAKE FOR 35 MINUTES, OR UNTIL GOLDEN CRUST IS FORMED. COOL.
  • 6. CUT INTO 2" SQUARES AND ROLL IN CONFECTIONER'S SUGAR.
