Steps:
- 1. Into a large pot, add the orange juice, sugar, cornstarch, salt, cinnamon and orange rind; stir constantly and bring to a rolling boil, stir until smooth and thick. (1 minute)
- 2. Remove the pot from the heat to add the butter, stir well.
- 3. Pour pudding into six (3-ounce) ramekins and chill at least a 1 - 2 hours (or until set) before serving.
