Orange-Cranberry Bran Muffins image

This is a recipe from the G.I. Diet book. They are loaded with fibre but taste really nice. Not a light cake like muffin. The cranberries give these muffins a nice little burst of tartness. I didn't have any fresh cranberries so I used dried.

I didn't have any fresh cranberries, so I used dried cranberries instead. They worked just fine.

I'm allergic to nuts, so I substituted the walnuts for chopped pecans. They turned out just as good!

The muffins were a little too dense for my liking. I think I'll try using a different type of flour next time, like all-purpose flour.

These muffins are a little dry for my taste. I think I'll try adding some applesauce or yogurt next time to make them more moist.

I'm not a big fan of cranberries, but I really enjoyed these muffins. The orange flavor is really strong and it complements the cranberries nicely.

These muffins are a great way to use up leftover cranberries. I had a bag of cranberries that was about to go bad, so I decided to make these muffins. They turned out so well that I'm going to have to buy more cranberries just so I can make them agai

The muffins were a little too sweet for my taste, but I think that's just a personal preference. I'll try reducing the amount of sugar next time.
