I made a few tweaks to make this recipe a bit healthier. I used low-fat milk and cheese, and I added some chopped spinach and mushrooms to the potatoes. It turned out great! It was still creamy and cheesy, but with a lighter feel. My family loved it!

This dish is pure comfort food! The chicken is tender and juicy, the potatoes are creamy and cheesy, and the sauce is rich and flavorful. It's perfect for a cold winter night. I love serving it with a side of steamed broccoli or green beans.

OMG! This one-pot wonder is a lifesaver! I'm terrible at multitasking in the kitchen, so having a recipe that cooks both the chicken and potatoes together is a dream come true. Plus, the cheesy au gratin sauce is to die for!
