I like putting green olives in egg salad. This is a quick and easy version.

Steps:
- 1. Chop eggs and olives. Add onions and mustard.
- 2. Mix together with mayonnaise and seasonings.
- 3. Layer spinach leaves on 2 slices of bread, cover each with half of the egg salad. Cover with other slices of bread.
