OATMEAL SWEET POTATO MUFFINS image

Yield 18 muffins

Number Of Ingredients 17

1 c oatmeal
1 c flour
1 t baking soda
1 t cinnamon
1/2 t nutmeg
1 c. sweet potato
3/4 c brown sugar
1/3 c canola oil
1/4 c skim milk
1 egg
1 t vanilla
Crumble topping
1/4 c oatmeal
1/4 c flour
1/4 c brown sugar
1 T butter
1 t vanilla

Steps:

  • Mix dry ingredients. Stir in sweet potato, sugar, oil, milk, egg, vanilla. Fill muffin tins. Sprinkle with crumble. Bake 15-20 minutes at 400.
