OATMEAL PRUNE COOKIES image

Yield 2 dozen

Number Of Ingredients 8

1 1/4 c. quick cooking oats
3/4 c. flour
3/4 c. packed brown sugar
1/3 c. shortening
1 tsp. vanilla
1/4 tsp. salt
1 egg
3/4 c. pitted prunes, chopped

Steps:

  • 1. Into large bowl, measure all ingredients except prunes. With mixer at low speed, beat ingredients until blended, occasionally scraping bowl with rubber spatula. Stir in prunes. 2. Preheat oven to 350 degrees. Drop mixture by heaping tablespoon, about 2 inches apart, onto ungreased large cookie sheet. Bake cookies 15 minutes or until golden brown. Makes about 2 dozen cookies.
