Oatmeal Macaroons Cookies image

This is an old version of a cookie that has become very popular with young people. I've even seen some with edible gold on them. This recipe does not include the gold..ha, ha.

The coconut in this recipe was a bit overpowering for me.

The cookies were a little too dry for my taste. Next time, I will add a bit more milk or butter.

I've been making these for many years and they are quite good. However, I only use half of the coconut it calls for, as I find the recipe a bit too dry otherwise.

They kept well in the refrigerator for days. I also froze a bunch and baked them off as I craved them.

These cookies had a nicely soft and soft chewiness to them.
