On those frigid winter mornings in Indiana, before school my mother would prepare a steaming bowl of oatmeal for me, laced with plenty of sugar. To accompany it, she would make a mug of hot, chocolaty cocoa with one or two of those huge marshmallows floating on top. It may not have been the most healthy breakfast with all that...

HOT OATMEAL:
1 3/4 c water (or milk for a creamier oatmeal)
1 c quaker quick oats
dash(es) salt
COCOA:
1/3 c cocoa powder
1/3 c sugar
dash(es) salt
1/2 c water
3 1/2 c milk
1/2 tsp vanilla

Steps:

  • 1. For the oatmeal: in a medium saucepan, bring the water (or milk) and salt to a boil. Stir in oats. Cook about 1 minute, stirring occasionally.
  • 2. Serve with brown sugar and/or fruit of your choice.
  • 3. For the cocoa: In a saucepan, mix cocoa, sugar and salt; add water. Bring to boiling, stirring constantly. Boil 1 minute. Stir in milk; heat to boiling point (do NOT boil). Add vanilla; beat with rotary beater just before serving. Float two large marshmallows on top of each serving. Makes about 4 servings.
