Steps:
- 1. Mix together oats, buttermilk, applesauce, brown sugar and oil, until well combined. Let sit for 15 minutes.
- 2. Preheat oven to 350 degrees. Line muffin pan with papers.
- 3. Fold in flour, baking soda and baking powder.
- 4. Fold in chocolate chips.
- 5. Pour batter into lined muffin pan.
- 6. Bake 20-25 minutes.
- 7. Let cool in pan 15 minutes before removing.
- 8. Enjoy!
