OATMEAL BLUEBERRY ORANGE MUFFINS image

Yield 24 muffins

Number Of Ingredients 13

2 cups plain rolled oats
2 cups whole wheat flour
2 t baking powder
2 t baking soda
2 t salt
3 cups flaked sweet coconut
grated rind of 2 oranges
2 eggs
1 cup honey
2/3 cup oil
2 T vinegar
2 cups orange juice
2 cups frozen or fresh blueberries

Steps:

  • Preheat oven to 350. Combine dry ingredients and wet ingredients in separate bowls; add wet to dry and stir until just moist. Fold in blueberries. Pour batter into lined muffin tin carefully. Bake 20-25 minutes.
