Oatmeal Blackberry Muffins image

These are relatively healthy and extremely yummy (and easy) muffins. You could substitute any berry you want!

Number Of Ingredients 11

2 cups flour
1 cup rolled oats
3/4 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup milk
1/2 cup applesauce (or oil)
1 teaspoon vanilla
1 egg, beaten
1 1/2 cups blackberries, chopped (juice too)

Steps:

  • 1) Combine dry ingredients in a medium bowl.
  • 2) Combine wet ingredients and blackberries in large bowl.
  • 3) Add dry ingredients to wet ingredients.
  • 4) Line muffin pan with cups, or spray with cooking spray (I use cups).
  • 5) Bake at 375 for 20 minutes.
