no peek stew image

this recipe I used when my son was training with the STV BlackJack. I was the cook and it was my job to cook for the kids and crew. Feeding about 10-20 teens and adults can be a challenge- there were never any leftovers and always requests to make this again. Very filling and great when served with fresh bread or buns. and like...

Time 3h20m

Number Of Ingredients 7

2 lb stew beef, cut in cubes
1 pkg dry onion soup mix
1 10 oz can mushroom soup
1 c water
1 can(s) mushroom pieces-water removed
3 c celery chopped-optional
rice as needed -in amount to suit number of people

Steps:

  • 1. make sure that the celery is washed, then chopped- I added this as an extra- because I like celery.
  • 2. place the rest of the ingredients in a 2 1/2 quart casserole dish in order given
  • 3. Bake at 300*F for 3 hours.Do not peek! Let stand for 15 minutes.
  • 4. Serve on a bed of rice- I like brown rice the best with wild rice added. You can easily double the recipe-but remember to increase the size of your casserole dish.I haven't tried this yet in a slow cooker but would imagine that it could be done

This recipe is a good starting point, but it needs some tweaking to make it really great. I would recommend adding more spices and herbs, and cooking the beef for a longer period of time.

Overall, I thought this recipe was just okay. It wasn't bad, but it wasn't anything special either.

The vegetables were a bit overcooked. I think I'll add them to the stew later next time.

The beef was a bit tough. I think I'll cook it for a longer period of time next time.

The stew was a bit too salty for my taste. I think I'll use less salt next time.
