This peanut butter cookie recipe is great because there are no carbs! Since I have been on South Beach diet I have craved a little sweet at night and these fit the bill very nicely and fit in with my plan. The crumble VERY easily so let them cool a bit before taking off the cookie sheet.

Steps:
- 1. Preheat oven to 350.
- 2. Mix all the ingredients together. You can add or decrease the Splenda to your own taste.
- 3. Break off about 12 pieces and roll into a ball the place on a cookie sheet sprayed with Pam. Press down with a fork in the familiar fork patern.
- 4. Bake for about 10 minutes or until they have stiffened up. Its kind of hard to tell but they will be firm to the touch. Cool then take off the cookie sheet and enjoy. Not your normal cookies but it fills a void. :-D
