6 ounces extra-old white cheddar cheese, grated
1 cup sour cream (works with lowfat)
1 red onion, finely chopped
1/2 teaspoon salt (or to taste)
1 teaspoon black pepper (or to taste)
1 teaspoon paprika
2 cloves garlic, minced

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all ingredients and cook in a casserole dish for 25-30 minutes or until potatoes are tender.
