Steps:
- Cream butter with the sugars using an electric mixer on low-medium speed for six minutes and until good and fluffy.
- Beat in egg and vanilla.
- In a separate, small mixing bowl, sift together the dry ingredients and beat into the butter mixture at a low speed until thoroughly absorbed (about a minute)
- Add espresso powder and chocolate chips and mix for about 15 seconds on low speed.
- Place dough onto saran wrap and create a log. Wrap the dough and keep in refrigerator for at least 30 minutes - up to one day.
- Preheat oven to 300 degrees
- Slice the cookie into small pucks and gently shape in palm of your hand, but not too long to let the heat of your body start to soften the cookie too much.
