Yield 6 dozen

Number Of Ingredients 9

2 1/2 c. flour
2 t. baking soda
2 t. cinnamon
2 t. cloves
2 t. ginger
3/4 shortening
1 cup sugar
1 egg (beaten)
4 T. molasses

Steps:

  • Mix the flour, soda and spices, sift together 3 times. Cream the shortening and sugar until light. Add the egg, beat thoroughly. Add the flour combo slowly until mixed well. Wrap in plastic and chill for at least an hour. Make walnut sized balls out of chilled dough. Take flat bottomed glass with damp towel and flatten the balls on greased cookie sheet. Bake at 350 for 10-12 minutes. Do not stack or store until completely cool. Should be crispy on the outside and chewy on the inside. Bliss.

I've tried many different molasses cookie recipes, and this one is by far the best. The pineapple adds a really nice flavor.

These cookies are really good, but they're a bit too sweet for me. I would reduce the sugar by 1/4 cup next time.

I'm not a huge fan of molasses, but I really enjoyed these cookies. The pineapple flavor really balances out the molasses.
